INGREDIENTS

whole wheat English muffin, split

2

thick slices tomato

1 tsp.

safflower oil

2

large eggs

thin slices cheddar cheese (1 ounce total)

RECIPE

  • Top each half of muffin with tomato. Place each muffin half on a plate. Set aside.
  • In small nonstick skillet, heat oil on medium-low heat.
  • Gently crack eggs into skillet and cook until eggs are almost set, about 1-2 minutes.
  • Top each egg with slice of cheese. Cook until cheese melts, about 1 minute.
  • Put one egg on each muffin half and enjoy!
