INGREDIENTS

1/2 cup unsalted butter, softened
1/4 cup applesauce, unsweetened
1/2 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 egg
2 tsps vanilla extract
2 cups all-purpose flour
1/2 tsp. cinnamon
1/2 tsp. salt (optional)
1/2 tsp. baking soda
1 1/2 cups uncooked, "quick" oatmeal
1 cup chocolate chips
RECIPE

  • Preheat oven to 350 degrees F.
  • In a bowl, combine the butter, applesauce, brown sugar, granulated sugar, egg and vanilla. Mix thoroughly.
  • In a separate bowl, combine the flour, cinnamon, salt and baking soda.
  • Gradually, mix the dry ingredients into the wet ingredients; add the oatmeal and chocolate chips. Stir well.
  • Drop spoonfuls of dough onto a greased cookie sheet.
  • Bake for 10 - 15 minutes. Let cool before removing from the cookie sheet.
