INGREDIENTS

1 (28 ounce)

can whole tomatoes

(to reduce the sodium in this recipe, use "no added salt" whole tomatoes)

1 cup chopped onion
2 - 4 chopped chilis
1 tbsp canola oil
1 tbsp vinegar
1 tbsp oregano leaves
1/2 tsp coriander
RECIPE

  • Chop tomatoes.
  • Combine all ingredients in a 3-quart saucepan.
  • Cook on medium heat for 15 - 20 minutes or until mixture thickens.
  • Cool. Pour in jar. Keep in refrigerator until ready to serve.
