INGREDIENTS

1 frozen deep dish pie crust, thawed
1 cup fat free half and half
4 eggs
2 tbsp. low fat mayonnaise
2 tbsp. flour
1/4 cup diced onion
1 10 oz. box frozen chopped spinach, thawed and squeezed dry
4 ounces Canadian bacon, diced
8 ounces 2% shredded cheddar or Swiss cheese
RECIPE

  • Preheat oven to 350 degrees F and place rack in middle of oven.
  • Thaw pie shell per package instructions.
  • Whisk together half and half, eggs, mayonnaise, and flour until well incorporated, but do not over mix.
  • Stir in onion, spinach, bacon, and cheese; mix well.
  • Pour into pie crust and bake 45-50 minutes or until center is set (will not jiggle in the middle).
  • Let stand about 5-10 minutes before cutting.
