INGREDIENTS

1 3/4 cups flour
2 cups sugar
3/4 cup cocoa
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt (optional)
2 eggs
1 cup strong black coffee
1 cup skim milk
2 tbsp. lemon juice
1/2 cup vegetable oil
1 tsp. vanilla
RECIPE

  • Preheat the oven to 350 degrees F.
  • In a bowl, combine the flour, sugar, cocoa, baking soda, baking powder, and salt.
  • In a separate bowl, combine the eggs, coffee, milk, lemon juice, oil, and vanilla. Add the dry ingredients and stir. The mixture will look lumpy.
  • Pour into a greased 13 x 9" pan.
  • Bake for approximately 45 minutes or until a knife inserted in the middle comes out clean. Add frosting or powdered sugar, if desired, once cake has cooled.
