INGREDIENTS

1½ cups packed fresh basil leaves
1½ tbsp. fresh grated Parmesan cheese
1½ tbsp. olive oil
1 tbsp. minced garlic
3 tbsp. nonfat plain yogurt
4 whole wheat English muffins, split
1 large tomato, sliced into 8 slices
  pepper to taste
RECIPE

  • Preheat broiler to high.
  • Place the basil, Parmesan, olive oil, garlic, and yogurt in a blender or food processor. Blend until smooth.
  • Place split English muffins on baking sheet and broil for 1-2 minutes or until lightly toasted.
  • Remove from oven and spread basil mixture evenly over each English muffin half.
  • Place one slice of tomato on each muffin half.
  • Return pan to oven and broil until tomatoes are just heated through.
