INGREDIENTS

3 tbsp. reduced fat mayonnaise
2 tbsp. grated Parmesan, divided
1 tbsp. fresh squeezed lemon juice
2 tsp. Dijon mustard
1 tsp. horseradish
4 (5 oz.) tilapia fillets
¼ cup plain dry breadcrumbs
2 tsp. butter, melted
RECIPE

  • Preheat oven to 425ºF.
  • In a small bowl, mix mayonnaise, 1 tablespoon Parmesan, lemon juice, mustard, and horseradish. Set aside.
  • In another small bowl, mix remaining Parmesan, butter, and breadcrumbs. Set aside.
  • Place fillets on baking sheet coated with cooking spray.
  • Spread mayonnaise mixture evenly over fish.
  • Sprinkle breadcrumb mixture over fish.
  • Bake for 13-18 minutes or until fish flakes easily with fork and topping is light brown.
