INGREDIENTS

1 cup unsweetened applesauce
¼ cup toasted sunflower seeds, unsalted
3 tsp. toasted flax seeds
2 cups soy flour
1½ cup raisin bran cereal
1 cup lite vanilla soy milk
¼ tsp. baking soda
RECIPE

  • Preheat oven to 350ºF.
  • Spray 8 muffin cups with cooking spray or line with paper liners.
  • Crush bran flakes and place in medium bowl.
  • Place remaining dry ingredients in bowl with raisin bran and whisk to combine.
  • In small bowl, mix together applesauce and soy milk.
  • Stir applesauce mixture into dry ingredients.
  • Divide evenly into 8 muffin cups.
  • Bake for 25-30 minutes or until toothpick inserted in middle comes out clean.
