INGREDIENTS

½ cup red onion, diced
2 cloves garlic, pressed
1 small red pepper, diced
1 can (15 oz.) unsalted black beans, rinsed and drained
1 tbsp. olive oil
2 tsp. chili powder
¼ tsp. red pepper
  salt and pepper to taste (optional)
2 whole wheat tortillas
2 oz. low fat shredded cheddar cheese
¼ cup salsa
RECIPE

  • Preheat olive oil in large non-stick skillet over medium heat.
  • Sauté onions and peppers until just tender.
  • Add garlic, beans, chili powder, red pepper, salt, and pepper. Allow to heat through.
  • Divide bean mixture and cheese over the two tortillas. Add salsa. Fold tortilla and enjoy!
