INGREDIENTS

8 oz. whole wheat rotini pasta, cooked & drained
  nonfat cooking spray
2 medium zucchini, cut into thin strips
1 medium sweet onion, cut into thin slices
1 cup frozen baby peas
1 large tomato, seeded & chopped finely
1 tsp. salt
½ tsp. dried basil
¼ tsp. seasoned pepper blend
RECIPE

  • While pasta is cooking, spray large nonstick sauté pan with cooking spray and sauté zucchini, onions, and peas for about 2 minutes.
  • Toss in tomatoes, basil, salt, and pepper. Continue to cook until everything is crisp and tender.
  • Add to pasta, toss to coat, and enjoy!
