INGREDIENTS

1 cup all-purpose flour
2 tbsp. sugar
1 tbsp. baking powder
1 cup fat-free milk
½ cup mashed banana
¼ cup liquid egg whites (i.e. Egg Beaters)
2 tbsp. unsalted butter, melted
¼ cup chopped walnuts, toasted
  nonfat cooking spray
  cinnamon and honey, optional
RECIPE

  • Whisk together flour, sugar, and baking soda in a medium bowl, set aside.
  • In a second medium bowl mix together milk, mashed banana, eggs and butter until well blended.
  • Add to flour mixture and stir until just combined (will be lumpy).
  • Let stand 10 minutes then stir in walnuts.
  • Spray large nonstick skillet with cooking spray.
  • Heat over medium heat.
  • Put ¼ cup batter into skillet forming pancakes.
  • Cook until bubbles form on top, turn and continue cooking for 2 minutes or until golden brown.
  • Repeat with remaining batter – you should have approximately 12 pancakes.
  • Serve with cinnamon and drizzled honey if desired.
