mashed banana |
| ¼ cup |
liquid egg whites (i.e. Egg Beaters) |

unsalted butter, melted |

chopped walnuts, toasted |

cinnamon and honey, optional |

| RECIPE |

Whisk together flour, sugar, and baking soda in a medium bowl, set aside.

In a second medium bowl mix together milk, mashed banana, eggs and butter until well blended.

Add to flour mixture and stir until just combined (will be lumpy).

Let stand 10 minutes then stir in walnuts.

Spray large nonstick skillet with cooking spray.

Heat over medium heat.

Put ¼ cup batter into skillet forming pancakes.

Cook until bubbles form on top, turn and continue cooking for 2 minutes or until golden brown.

Repeat with remaining batter – you should have approximately 12 pancakes.

Serve with cinnamon and drizzled honey if desired.
