INGREDIENTS

6 large eggs
1 c nonfat milk
½ c flour
¼ tsp salt
½ tsp pepper
4 oz shredded low fat cheddar cheese
  cooking spray
RECIPE

  • Preheat oven to 450º.
  • Place eggs and milk in a blender. Add the flour, salt and pepper; cover and process until smooth.
  • Using cooking spray, coat a 13-in. x 9-in. baking pan.
  • Pour eggs into dish and bake for 20 minutes or until eggs are set.
  • Sprinkle with cheese and gently roll up in pan like a jelly roll. 
  • Place with seam side down on a serving platter.
  • Cut into 3/4-in. slices.
