fresh orange juice |

Scrub beets. Cut tops leaving 1 inch of the stem.

Boil in orange juice until tender.

Drain, reserving liquid.

Let beets cool. Peel and slice.
Place reserve liquid in sauce pan and reduce to a glaze over medium heat.

Toss beets with glaze.
