INGREDIENTS

3 tbsp. fat free mayonnaise
2 tbsp. mango chutney (found in condiment aisle)
8 oz. diced grilled chicken breast
¼ cup red seedless grapes, halved
¼ cup celery, finely chopped
1 tbsp. red onion, finely chopped
⅛ tsp. Kosher salt
⅛ tsp. freshly ground pepper
2 large lettuce leaves, washed and dried
2 tbsp. almonds, toasted
RECIPE

  • In a small bowl, mix together mayonnaise and mango chutney.
  • Add chicken, grapes, and onion. Toss to coat.
  • Season with salt and pepper, if desired.
  • Place lettuce leaves on two plates, evenly divide the salad between the two plates.
  • Sprinkle almonds on top. Enjoy!
