INGREDIENTS

1 tbsp. red wine vinegar
1 tbsp. freshly squeezed orange juice
1 tbsp. olive oil
1 tsp. sugar
¼ tsp. dry mustard
6 cups mixed greens
1 can (10.5 oz.) mandarin orange sections in juice, drained
½ cup fresh raspberries or strawberries
2 tbsp. sliced almonds, lightly toasted*
12 oz. grilled chicken breast, sliced (get at your deli counter)
RECIPE

  • Place vinegar, orange juice, olive oil, sugar, and dry mustard in a container with a tight-fitting lid. Shake well and set aside.
  • Place greens in large salad bowl.
  • Pour dressing over all and toss to coat.
  • Divide greens between six plates.
  • Top each plate evenly with mandarin oranges, berries, chicken, and almonds. Enjoy!

    *To toast almonds, place in dry skillet and cook over low heat, stirring frequently until light brown.
