INGREDIENTS

1 lb. zucchini, sliced in ¼-inch rounds
1 lb. eggplant, sliced in ¼-inch rounds
1 lb. portabella mushrooms, gilled removed & sliced
1 lb. red onion, sliced in ¼-inch rounds
1 lb. tomatoes, sliced in halves
1 cup fat free Italian dressing
RECIPE

  • Prepare veggies and toss all together with Italian dressing. Let marinate.
  • While veggies are marinating, prepare grill to medium heat.
  • Gently place veggies on grill and cook until just cooked through, turning occasionally.

    TIP – When cooking tomatoes, place on a piece of foil so they don’t fall through.
