INGREDIENTS

  nonfat cooking spray
1 (15 oz.) container liquid eggs
½ cup fat-free milk
¼ cup pure maple syrup
½ tsp. salt (optional)
⅛ tsp. ground pepper
3 cups cooked sweet potato cubes (about 1 lb.)
3 frozen brown and serve turkey sausage patties, chopped
1 cup low-fat cottage cheese
½ cup low-fat shredded cheddar cheese, divided
RECIPE

  • Preheat oven to 350ºF.
  • Spray an 8x8” glass baking dish with cooking spray, set aside.
  • Peel and cube sweet potatoes.
  • Place sweet potatoes in microwave safe bowl with ¼ inch water.
  • Cover tightly with plastic wrap and microwave on high for 4-5 minutes or until just tender.
  • Drain potatoes and set aside.
  • Whisk together eggs, milk, syrup, salt, and pepper in large bowl.
  • Add and combine cooked sweet potatoes, sausage, cottage cheese, and ¼ cup cheddar cheese.
  • Pour into prepared baking dish.
  • Bake for 70-75 minutes or until knife inserted in center comes out clean.
  • Sprinkle with remaining cheese and bake an additional 5 minutes to melt cheese.
