| RECIPE |

Preheat oven to 350ºF.

Spray an 8x8” glass baking dish with cooking spray, set aside.

Peel and cube sweet potatoes.

Place sweet potatoes in microwave safe bowl with ¼ inch water.

Cover tightly with plastic wrap and microwave on high for 4-5 minutes or until just tender.

Drain potatoes and set aside.

Whisk together eggs, milk, syrup, salt, and pepper in large bowl.

Add and combine cooked sweet potatoes, sausage, cottage cheese, and ¼ cup cheddar cheese.

Pour into prepared baking dish.

Bake for 70-75 minutes or until knife inserted in center comes out clean.

Sprinkle with remaining cheese and bake an additional 5 minutes to melt cheese.
