INGREDIENTS

4 (5 oz.) boneless skinless chicken breasts
1 tbsp. canola oil
3 tbsp. apricot preserves
2 tbsp. orange juice
4 tsp. honey
RECIPE

  • Heat oil in large nonstick skillet.
  • Sauté chicken breasts until light brown and internal temperature reads 165ºF on thermometer.
  • While chicken is cooking, mix together the apricot preserves, orange juice, and honey.
  • When chicken is cooked through, pour apricot mixture over chicken and let cook about 2 minutes to heat through. Serve.
