| RECIPE |
- Heat oil in large nonstick skillet.
- Sauté chicken breasts until light brown and internal temperature reads 165ºF on thermometer.
- While chicken is cooking, mix together the apricot preserves, orange juice, and honey.
- When chicken is cooked through, pour apricot mixture over chicken and let cook about 2 minutes to heat through. Serve.
