| RECIPE |
- Heat gas grill to medium or prepare charcoal grill with medium hot coals. If you don’t have either one, preheat broiler to high with rack 8-inches below coil.
- Mix all the spices together in small bowl.
- Put raw chicken on a large plate and rub with 1 teaspoon spice mixture. Be sure to wash your hands with hot soap and water, as well as, any surfaces exposed to the raw chicken.
- Stir remaining spice mixture into the mayonnaise and set aside.
- Spray nonstick skillet with cooking spray and cook turkey bacon until crispy. Or, prepare in microwave according to package directions. Break into pieces and set aside.
- If chicken is not thin cut, place breasts in large heavy duty zip lock bag and pound with a mallet until ¼-inch thick.
- Grill or broil for 2 minutes, turn and continue to cook until chicken is cooked through.
- Spread each slice of toast with 2 teaspoons prepared mayonnaise.
- Top half of the toast with chicken, slice of tomato, bacon pieces, and 2 lettuce leaves.
- Top with remaining toast, mayo side down. Cut in half and enjoy!
