INGREDIENTS

2 tsp. paprika
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. cayenne pepper
⅛ tsp. salt
⅛ tsp. black pepper
4 slices thin cut boneless, skinless chicken breast

(¾ lb. total)

4 slices turkey bacon
8 tsp. light mayonnaise
8 leaves green leaf lettuce
4 thick slices of tomato
8 slices whole wheat toast
RECIPE

  • Heat gas grill to medium or prepare charcoal grill with medium hot coals. If you don’t have either one, preheat broiler to high with rack 8-inches below coil.
  • Mix all the spices together in small bowl.
  • Put raw chicken on a large plate and rub with 1 teaspoon spice mixture. Be sure to wash your hands with hot soap and water, as well as, any surfaces exposed to the raw chicken.
  • Stir remaining spice mixture into the mayonnaise and set aside.
  • Spray nonstick skillet with cooking spray and cook turkey bacon until crispy. Or, prepare in microwave according to package directions. Break into pieces and set aside.
  • If chicken is not thin cut, place breasts in large heavy duty zip lock bag and pound with a mallet until ¼-inch thick.
  • Grill or broil for 2 minutes, turn and continue to cook until chicken is cooked through.
  • Spread each slice of toast with 2 teaspoons prepared mayonnaise.
  • Top half of the toast with chicken, slice of tomato, bacon pieces, and 2 lettuce leaves.
  • Top with remaining toast, mayo side down. Cut in half and enjoy!
