INGREDIENTS

1¼ cups boiling water
1 cup rolled oats
¼ cup vegetable oil
¼ cup applesauce
2 eggs
⅔ cup granulated sugar
¾ cup packed brown sugar
1 ⅓ cups all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp. ground nutmeg
½ cup raisins
½ cup chopped walnuts
  nonfat cooking spray
RECIPE

  • Preheat oven to 350°F.
  • Combine rolled oats with boiling water and let stand for 20 minutes.
  • Spray a 9” square pan with nonfat cooking spray and flour.
  • In a medium bowl, sift flour, baking soda, cinnamon, and nutmeg. Set aside.
  • In a large bowl, combine oatmeal, oil, and applesauce. Add eggs, sugar, and brown sugar. Mix well.
  • Fold in the raisins and nuts to mixture. Pour into prepared pan.
  • Bake for 35 minutes or until a toothpick inserted into the cake comes out clean.
