INGREDIENTS

1 medium Granny Smith Apple
1¼ cups pancake mix
½ tsp. ground cinnamon
1 egg
2 tsp. canola oil
1 cup 1% milk
RECIPE

  • Lightly coat griddle or skillet with cooking spray and heat over medium heat.
  • Peel, core, and slice apple into 6 rings.
  • In medium bowl combine pancake mix, cinnamon, egg, canola oil, and milk.  Mix together gently until just combined, lumps will still be visible.
  • Place an apple ring on griddle, top with ¼ cup pancake batter and turn over when bubbles appear on pancake.
