INGREDIENTS

1 tbsp. olive oil
3 large garlic cloves, sliced thin
1 c. long-grain white rice, rinsed
2 c. water
2 tbsp. fresh lime juice
2 tbsp. cilantro, minced
2 tbsp. lime zest, minced
RECIPE

  • Heat oil in large sauté pan over medium heat. Add garlic and sauté 3 minutes or until golden brown, being careful not to burn it.
  • Add rice and sauté 2 minutes.
  • Add water and lime juice, bring to a boil and cover. Reduce heat and simmer 20 minutes or until water has absorbed.
  • Stir in cilantro and lime zest before serving.
