INGREDIENTS

1/3 c low fat mayonnaise
1/3 c chopped fresh cilantro leaves
3 scallions, sliced thin
1/2 c diced celery
2 tbsp fat free sour cream
2 tsp hot sauce
12 oz roasted turkey, skin removed
  pepper to taste
1 c shredded low-fat cheddar cheese
4 10" flour tortillas
RECIPE

  • Mix together mayonnaise, cilantro, scallions, celery, sour cream, and hot sauce.
  • Add chicken to mayonnaise mix and toss to combine. Season with salt and pepper if desired.
  • Lay out 4 tortillas flat on counter, sprinkle with cheese leaving 1/2 inch border around.
  • Divide chicken mixture evenly among the four tortillas in the center.
  • Roll tortillas tightly, spray with cooking spray and set aside.
  • Heat large skillet over medium heat for 1 minute.
  • Place 2 tortillas in skillet and cook until golden brown, remove to plate and repeat with remaining tortillas, serve warm.
