INGREDIENTS

1 1/2 c. chopped, slightly toasted walnuts
1 1/2 c. celery, thinly sliced
1 1/2 c. red seedless grapes, sliced (or ¼ cup of raisins)
3 sweet apples, cored and chopped
1/2 c. mayonnaise or plain non-fat yogurt
3 tbsp. fresh lemon juice
1/2 tsp. pepper
6 Boston lettuce leaves
RECIPE

  • In a large bowl, whisk together mayonnaise (or yogurt) and lemon juice.
  • Add salt and pepper, if desired.
  • Mix in the apple, celery, grapes, and walnuts.
  • Serve on a bed of fresh lettuce.

 ½ cup salad w/one lettuce leaf
