INGREDIENTS

1 box Jiffy cornbread mix
2 eggs
8 oz shredded 2% cheddar cheese
1/3 cup Splenda
1/2 cup Smart Balance Light Margarine
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 package (10 oz) chopped spinach, squeezed dry
RECIPE

  • Preheat oven to 400 degrees F.
  • Saute onion and pepper in margarine until soft
  • Add spinach and blend in.
  • While cooking onions and peppers, mix together remaining ingredients in medium size bowl.
  • When onions and peppers are finished, stir into the cornbread mix.
  • Spray 9 x 11 baking dish with cooking spray. Spread batter and bake for 20 -30 minutes or until golden brown.
