INGREDIENTS

1 12 oz. tuna pouch in water
1/4 cup light mayonnaise
1/4 cup thinly sliced celery
1/4 cup diced red onion
  salt and pepper to taste
4 medium tomatoes
4 lettuce leaves
RECIPE

  • Put tuna, mayo, celery, onion, salt and pepper in mixing bowl, mix gently.
  • Core each tomato and cut into quarters – but not all the way through making a small bowl.
  • Place a lettuce leaf on each plate, top with tomato and fill with tuna salad.
