INGREDIENTS

1 lb seedless cucumber, sliced very thin (about 3 cups)
1 lb heirloom tomatoes, sliced thin (about 3 1/2 cups)
1/2 cup light mayonnaise
  Juice of 1/2 lemon (1-2 Tablespoons)
1 tsp fresh cracked pepper
1 tbsp chopped fresh basil
RECIPE

  • Combine cucumbers and tomatoes in large bowl.
  • Whisk together mayonnaise, lemon juice, basil and pepper.
  • Add to cucumbers and tomatoes, toss gently and enjoy!
