INGREDIENTS

4 medium onions
1 lb. fresh baby spinach, chopped (or 2 boxes frozen cut spinach, thawed and squeezed dry)
2 tbsp. melted butter
1/4 c. fat-free half and half
1/2 tsp. freshly ground pepper
1/2 c. grated Parmesan cheese
RECIPE

  • Preheat oven to 350ºF.
  • Peel onions and slice in half horizontally (through the middle).
  • Place in glass microwave safe dish with 2 tablespoons water. Cover with plastic and microwave 6-8 minutes or until tender. Cool slightly.
  • Remove center of onions, leaving shells intact, chop center and place in medium bowl. Place shells in baking dish in single layer.
  • Wash spinach and wilt spinach in microwave for 1-2 minutes; do not add extra water.
  • Mix spinach and chopped onions with milk and butter.
  • Fill each onion shell with spinach mixture; divide Parmesan cheese over onions. (Can be frozen at this point and then baked later).
  • Bake for 20-30 minutes or until heated through and cheese is lightly browned.
