INGREDIENTS

1 lb shrimp, peeled and deveined, uncooked
1 tbsp olive oil
1 cup uncooked orzo
1 pint cherry or grape tomatoes
1 cup chopped sweet onion
2 large garlic cloves, minced
1/4 cup fresh basil chopped
1/4 cup freshly grated parmesan cheese
RECIPE

  • Cook orzo according to package directions.
  • While orzo is cooking, sauté shrimp in large fry pan with olive oil and sprinkle with salt and pepper. When shrimp is just done remove from pan and set aside. Add a little oil and sauté remaining ingredients except orzo and parmesan.
  • When orzo is cooked, drain and add to sauté pan with the shrimp, let everything come together, sprinkle with parmesan and enjoy!
