French green beans (the thin kind)

7-ounce halibut fillets, approximately 1 inch thick

salt and pepper to taste

2 tbsp

canola oil

1/4 cup

dry white wine
|

2 tbsp

fresh lemon juice

4 tbsp

unsalted butter
|

green onions, white part only, sliced thin

large ripe tomato, peeled, seeded and diced

| RECIPE |
- Steam green beans and set aside on platter.
- Heat oil in 12 inch sauté pan over high heat.
Salt and pepper fillets and cook fish for about 3 minutes, until lightly browned.
Turn over, reduce heat to medium and cook another 4-5 or until fish is opaque in center. Put fish on platter with beans and cover to keep warm.
- Pour off any oil in pan, add the wine and lemon juice, bring to a boil and reduce scraping any pieces off bottom of pan. After it has reduced, add butter in pieces to flavor sauce.
Then add green onions, and tomatoes to heat through.
Pour over fish and serve immediately.
