INGREDIENTS

1 tbsp sugar
1/2 tsp cinnamon
1 1/4 cups all-purpose flour
1/2 cup sugar
1/2 tsp salt (optional)
1 tbsp baking powder
3 cups Ready-To-Eat Raisin Bran cereal
 1 1/4 cups skim milk
1/4 cup vegetable oil
1/2 cup semi sweet mini chocolate morsels
RECIPE

  • Spray muffin cups with non-fat cooking spray or line with paper muffin cups.
  • Preheat oven to 400°F.
  • In a small bowl, combine 1 tablespoon sugar and cinnamon. Set aside for muffin topping.
  • Stir together the flour, ½ cup of sugar, salt (optional), and baking powder. Set aside.
  • In a large bowl, combine the Raisin Bran cereal and milk.  Let stand 2 minutes or until cereal softens.
  • Add egg, oil, and chocolate morsels.  Beat well.
  • Add flour mixture, stirring only until combined.
  • Portion muffin mixture evenly into twelve muffin cups. Fill muffin cups 2/3 full.
  • Bake for 20 minutes or until an inserted knife comes out clean. Serve warm.
