| RECIPE |

Spray muffin cups with non-fat cooking spray or line with paper muffin cups.

Preheat oven to 400°F.

In a small bowl, combine 1 tablespoon sugar and cinnamon. Set aside for muffin topping.

Stir together the flour, ½ cup of sugar, salt (optional), and baking powder. Set aside.

In a large bowl, combine the Raisin Bran cereal and milk. Let stand 2 minutes or until cereal softens.

Add egg, oil, and chocolate morsels. Beat well.

Add flour mixture, stirring only until combined.

Portion muffin mixture evenly into twelve muffin cups. Fill muffin cups 2/3 full.

Bake for 20 minutes or until an inserted knife comes out clean. Serve warm.
