INGREDIENTS

1/2 lb pork tenderloin
1 1/2 tbsp brown sugar
1 1/2 tbsp low-sodium soy sauce
1 tbsp orange juice
1 tbsp grated fresh onion
2 tsp fresh lemon juice
1/8 tsp salt
  dash of pepper
1 bay leaf
8 1-inch cubes fresh pineapple
8 1-inch pieces red bell pepper
  cooking Spray
RECIPE

  • Trim fat from pork and cut into 8 1-inch cubes.
  • Combine brown sugar and next seven ingredients (through bay leaf) in large zip-top heavy duty plastic bag; add the pork cubes and marinade in refrigerator for up to 1 hour but no more.
  • Remove pork from bag, reserve marinade. Thread 4 each of pork, pineapple and pepper alternately on wooden skewers.
  • Place kebabs on grill coated with cooking spray, cook 14 minutes or until pork is cooked through basting frequently with reserved marinade.
