INGREDIENTS

This breakfast provides protein, whole grains and fresh fruit for a breakfast sure to help you start your morning right. Simply mix together and leave in fridge overnight. Enjoy cold or heat for a few minutes before serving.
2 cup rolled oats (not instant or quick cooking)
2 cups lowfat milk or milk substitute
1 tsp lemon zest
1/2 tsp vanilla extract
1/3 cup pine nuts
2 apricots, chopped, or other seasonal fruit
2 tbsp agave nectar (optional)
RECIPE

  • Combine oats, milk, lemon zest and vanilla in a bowl.
  • Cover and refrigerate overnight.
  • In the morning, stir in pine nuts, apricots and agave nectar, warm up or serve chilled.
