INGREDIENTS

4 1/4 lb. boneless, skinless chicken breasts
2 tsp olive oil
1/4 cup buffalo sauce (from grocery store)
4 crusty whole wheat rolls
4 lettuce leaves
4 slices of large tomato
1/4 cup light mayonnaise
1/4 cup sliced scallions
RECIPE

  • Mix mayonnaise and scallions together, set aside.
  • Brush chicken with olive oil and grill for two minutes. Brush with buffalo sauce, turn, brush with sauce and continue grilling and brushing with sauce until chicken reaches an internal temperature of 165 degrees.
  • Spread one half of each roll with mayonnaise mixture. Top with lettuce, onion, tomato and chicken, serve up and enjoy!
