INGREDIENTS

2 c. unsweetened apple juice
1 c. filtered water
1 1/2 tsp. cinnamon
1/2 tsp. salt (optional)
2 c. old fashioned oats (not quick)
1 (6 ounce) container of fat free French vanilla yogurt
2 medium peaches, peeled and chopped – about 1½ cups
2 tbsp. sliced almonds
RECIPE

  • Using a 2 quart saucepan, bring apple juice, water, cinnamon, and salt to a boil.
  • While liquid is boiling, add oats. Return to a boil; reduce heat to medium low and cook for 5 minutes, stirring occasionally.
  • Stir in yogurt and peaches. Continue cooking, stirring occasionally, for 2 minutes or until oatmeal texture is heated through.
  • Serve topped with almonds.
