INGREDIENTS

4 4 oz. boneless, skinless chicken breasts
1 package Good Seasons Garlic and Herb Dressing Mix - dry
1/4 c olive oil
1/4 c dry sherry (not cooking)
2 tbsp lite mayonnaise
1/2 tbsp chopped chives
1/2 tbsp chopped parsley
4 romaine lettuce leaves, washed and dried
4 kaiser rolls, split
RECIPE

  • Place chicken breasts in zip-lock bag.
  • Mix olive oil, sherry and dressing mix together in a tight fitting closed jar; shake well.
  • Pour mix over chicken, seal, and set aside for 1/2 hour up to 12 hours (the longer the better).
  • Preheat broiler to high.
  • Drain and discard marinade from chicken using tongs to place chicken on broiler rack.
  • Broil for 3 minutes on each side or until internal temperature is 165 degrees F.
  • Mix the mayonnaise and herbs together; divide and spread evenly among the rolls.
  • Top roll with lettuce leaf and chicken - enjoy.
  • This can be served warm or cold and taste great grilled.
