INGREDIENTS

Bars:
½ c. margarine
½ c. fruit sweetener (i.e., Fruit Sweet®, Fruit Up®)
½ c. mashed banana
1 egg
½ c. canned pumpkin
2 tsp. vanilla
1½ c. all-purpose flour
1 tsp. cinnamon
1 tsp. ginger
1 tsp. allspice
1 tsp. baking soda
½ c. raisins
½ c. chopped nuts
Topping:

3 tbsp. orange juice concentrate
3 tbsp. fruit sweetener (i.e., Fruit Sweet®, Fruit Up®)
2 tsp. orange rind, freshly grated
1 tsp. vanilla
RECIPE

  • Preheat oven to 325°F. Spray 13x9” baking pan with nonfat cooking spray.
  • Combine margarine, fruit sweetener, and mashed banana. Beat in egg, pumpkin, and vanilla.
  • Combine dry ingredients and stir in pumpkin mixture. Add raisins and nuts.
  • Bake for 20 – 25 minutes or until firm in the center.
  • Combine juice concentrate, 3 tablespoons fruit sweetener, orange rind, and 1 teaspoon vanilla.
  • Spread glaze over warm bars.
  • (Note: Fruit sweetener is a sugar substitute that is made from fruit juice. It can be ordered online if you are unable to find it in the natural foods section of your grocery store.)
