INGREDIENTS

4 oz lite cream cheese, softened
1/4 c dried cranberries, chopped
2 tbsp low sugar apricot jam
1/2 tsp curry powder
  juice of 1/2 lime
4 12" flour tortillas
6 - 8 leaves of red leaf lettuce
8 oz deli-style lite turkey breast, sliced thinly
1 c cucumber, peeled, seeded and sliced thinly
1/2 c fresh cilantro leaves
RECIPE

  • Combine cream cheese, cranberries, jam, curry powder, and lime juice in a small bowl.
  • Warm a tortilla over low heat in nonstick skillet.
  • Spread 1/4 of the cream cheese over the tortilla.
  • Layer on tortilla in order of lettuce, turkey, cucumber, and cilantro.
  • Roll up tightly, cut in half, repeat with rest of tortillas and enjoy.
