INGREDIENTS

1 ½ tbsp. fine dry plain bread crumbs
1 c. frozen chopped onions
1 c. diced Canadian bacon (¼ pound)
1 tbsp. unsalted butter
1 (8-ounce) package low-fat shredded Swiss cheese (2 cups)
4 large eggs
1 c. fat free, half-and-half
1 c. 2% milk
RECIPE

  • Preheat oven to 425°F with rack in middle.
  • Spray quiche dish with cooking spray, then sprinkle all over with bread crumbs.
  • Cook onions with ham in butter in a 12-inch heavy skillet over medium-high heat; stir occasionally until pale golden, about 5 minutes.
  • Spread in dish, and then evenly sprinkle cheese on top.
  • Whisk together eggs, half-and-half, milk, and ½ teaspoon pepper and pour over cheese.
  • Bake until top is golden and custard is set in center, 20 to 25 minutes. Cool slightly before cutting into wedges.
