| RECIPE |
- Heat large non-stick skillet coated with cooking spray over medium heat.
- Whisk together eggs, half and half, salt and pepper, pour into skillet and let it hang out until it starts to cook on the bottom.
- When it seems to begin cooking, gently start folding eggs over to cook all over.
- Just when they begin to really come together, add the cream cheese and cheddar cheese, turn the heat down to low and continue to gently fold eggs and cheese together.
- Serve immediately and enjoy!
