INGREDIENTS

6 extra large eggs
1/4 cup fat-free half and half
3 oz light cream cheese, diced
1/2 cup low fat shredded cheddar cheese
  salt and pepper to tast
  cooking spray
RECIPE

  • Heat large non-stick skillet coated with cooking spray over medium heat.
  • Whisk together eggs, half and half, salt and pepper, pour into skillet and let it hang out until it starts to cook on the bottom.
  • When it seems to begin cooking, gently start folding eggs over to cook all over.
  • Just when they begin to really come together, add the cream cheese and cheddar cheese, turn the heat down to low and continue to gently fold eggs and cheese together.
  • Serve immediately and enjoy!
