INGREDIENTS

2 cups chicken stock
1 box instant couscous
1 tsp salt
1/2 tsp freshly ground cinnamon
1/4 cup olive oil
1 lemon, zested and juiced
1 large cucumber, peeled, seeded and diced
1 red bell pepper, cored, seeded and diced
1 bunch green onions, minced
1/4 cup cilantro leaves, chopped
  fresh ground pepper
RECIPE

  • Prepare couscous using chicken stock instead of water, fluff and allow to cool completely.
  • In large bowl, combine remaining ingredients down to the green onions. Toss in couscous and cilantro, taste and adjust seasoning with salt and pepper.
