INGREDIENTS

2 medium Granny Smith apples, sliced
1 c. cooked chicken breast, diced
½ c. fat-free shredded cheddar cheese
½ c. part skim shredded mozzarella
½ c. sweet corn kernels, frozen, thawed (or fresh kernels)
4 oz. fresh tomatoes, chopped (equal to ½ cup)
½ c. fresh chopped onion
¼ tsp. salt (optional)
6 flour tortillas, warmed
¾ c. shredded lettuce leaves
¾ c. salsa
6 tbsp. fat-free sour cream
RECIPE

  • Preheat oven to 400° F. Spray a baking sheet with nonstick cooking spray and set aside.
  • Mix together the apples, chicken, cheeses, corn, tomatoes, onion, and salt.
  • Spoon about ¾ cup of the apple and chicken mixture onto half of each tortilla.
  • Fold the other half of the tortilla over and secure with toothpicks.
  • Place on baking sheet and bake for 8 to 10 minutes.
  • Flip tortillas over and bake another 5 to 8 minutes.
  • Remove toothpicks and slice each tortilla into three equal triangles. Serve with lettuce, salsa, and sour cream.
