fresh tomatoes, chopped (equal to ½ cup)

flour tortillas, warmed |

shredded lettuce leaves |

| RECIPE |
- Preheat oven to 400° F. Spray a baking sheet with nonstick cooking spray and set aside.
- Mix together the apples, chicken, cheeses, corn, tomatoes, onion, and salt.
- Spoon about ¾ cup of the apple and chicken mixture onto half of each tortilla.
- Fold the other half of the tortilla over and secure with toothpicks.
- Place on baking sheet and bake for 8 to 10 minutes.
- Flip tortillas over and bake another 5 to 8 minutes.
- Remove toothpicks and slice each tortilla into three equal triangles. Serve with lettuce, salsa, and sour cream.
