INGREDIENTS

8 c shredded romaine lettuce
1 c red onion, sliced thinly
2 c cherry tomatoes, halved
8 oz low-fat deli turkey breast, sliced a little thicker
4 oz low-fat deli ham, sliced a little thicker
8 oz Alpine Lace low fat, reduced sodium swiss cheese, sliced
Pepper Parmesan Dressing
3 heaping tbsp mayonnaise
1 lemon zested and juiced (mince the zest)
1 tsp coarse pepper, eyeball the amount in the palm of your hand: 1 tsp is equal to about 1/3 of a palm full
3 tbsp extra-virgin olive oil
1/2 c grated Parmigiano-Reggiano
  pinch salt
RECIPE

  • Divide lettuce among four plates.
  • Top with onion, tomatoes, meats and cheese.
  • Dress with dressing and enjoy!
  • Pepper Parmesan Recipe
  • Combine the mayonnaise, lemon zest (grated yellow part of lemon) and lemon juice in small bowl.
  • Add pepper to the dressing bowl and whisk together.
  • Slowly whisk in the olive oil (you may add up to 1 additional TBSP if you think it is too thick).
  • When it is well mixed, stir in the parmesan and set aside.
