INGREDIENTS

3 tbsp apple jelly, warmed
1 tbsp fresh squeezed lemon juice
2 tsp shallots, minced
  salt to taste
1 tbsp dijon mustard
1 tbsp olive oil
8 sl French bread, cut on an angle, toasted
1 1/2 c field greens
2 c cooked chicken, white meat from a rotisserie chicken
1 granny smith apple, sliced thinly
RECIPE

  • Mix together jelly, lemon juice, shallots, and salt.
  • In second small bowl, mix Dijon and oil together.
  • Brush one side of each bread slice with mustard mixture, top with greens, chicken and then apple.
  • Brush with apple jelly mixture, enjoy!
