INGREDIENTS

1 tbsp. olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, chopped
2 cans (14.5 oz.) black beans, rinsed, drained, and mashed
2 tbsp. yellow cornmeal
1½ tbsp. cumin
1 tsp. paprika
1 tsp. cayenne pepper
1 tsp. chili powder
1 cup salsa
3 cups shredded lettuce
1 cup chopped tomatoes
½ cup fat-free sour cream
8 fat-free soft tortillas
RECIPE

  • Heat olive oil in a medium skillet over medium heat.
  • Sauté onion, garlic, and bell pepper, until tender.
  • While onions are cooking, mix the cornmeal, cumin, paprika, cayenne pepper, and chili powder together in a small bowl. Set aside.
  • When onions are soft, stir in mashed beans. Mix well.
  • Add spice mixture and salsa, mix well. Cook for 5 minutes to bring flavors together and warm through.
  • Prepare tortillas according to package.
  • Place ¼ cup mixture in center of tortilla, top with lettuce, tomatoes and sour cream, if desired. Roll and enjoy!
