| RECIPE |
- Heat olive oil in a medium skillet over medium heat.
- Sauté onion, garlic, and bell pepper, until tender.
- While onions are cooking, mix the cornmeal, cumin, paprika, cayenne pepper, and chili powder together in a small bowl. Set aside.
- When onions are soft, stir in mashed beans. Mix well.
- Add spice mixture and salsa, mix well. Cook for 5 minutes to bring flavors together and warm through.
- Prepare tortillas according to package.
- Place ¼ cup mixture in center of tortilla, top with lettuce, tomatoes and sour cream, if desired. Roll and enjoy!
