INGREDIENTS

4 cups carob
⅛ tsp. artificial sweetener (i.e. Splenda®)
1 cup unsalted peanuts, finely chopped
RECIPE

  • Melt carob in a double boiler.
  • Add artificial sweetener to melted carob and stir well.  Place mixture in a bowl to cool.
  • When carob mixture is cool enough, form into a 1” diameter balls and roll in the chopped nuts. Place on waxed paper.
  • Place truffles in a refrigerator for 20 minutes to set.
