| RECIPE |
- Preheat broiler to high.
- Place the basil, Parmesan, olive oil, garlic, and yogurt in a blender or food processor. Blend until smooth.
- Place split English muffins on baking sheet and broil for 1-2 minutes or until lightly toasted.
- Remove from oven and spread basil mixture evenly over each English muffin half.
- Place one slice of tomato on each muffin half.
- Return pan to oven and broil until tomatoes are just heated through.
