INGREDIENTS

2 lbs. sweet potatoes, peeled and sliced into ½ inch rounds
3 tbsp. olive oil
4 tbsp. minced garlic
⅓ cup fresh thyme leaves
½ tsp. red pepper flakes
RECIPE

  • Preheat oven to 450ºF.
  • Toss all ingredients in large bowl to coat.
  • Place sweet potatoes on large baking sheet sprayed with cooking spray in a single layer.
  • Place on top rack in oven and roast until tender and a little brown, about 40 minutes.
  • Serve warm or at room temperature.
