INGREDIENTS

1½ lb. French green beans
⅓ cup sliced green onions
1 garlic clove, minced
2 tsp. olive oil
¼ cup balsamic vinegar
4 tsp. sugar
1½ tsp. fresh tarragon, minced
⅛ tsp. salt
¼ cup almonds, toasted
RECIPE

  • Place beans in a saucepan and cover with water.
  • Bring to a gentle boil and cook, uncovered, for 3-5 minutes or until just tender.
  • Drain, set aside.
  • Heat olive oil in large nonstick skillet. Sauté onions and garlic until tender.
  • Add the vinegar, sugar, tarragon and salt.
  • Bring to a boil. Cook until liquid is reduced by half.
  • Add beans to onions, cook over low heat until heated through.
  • Sprinkle with almonds.
