medium green apples, cored, peeled and diced

lemon juice |

canola oil |

dried cranberries |
| 1/2 cup |
vanilla low fat
yogurt, if desired |

| RECIPE |
- In a large nonstick skillet over low heat, toast the granola for 2 - 3 minutes.
- In a small bowl, combine apple juice and cornstarch.
- In a medium bowl combine the cornstarch mixture with the apples, sugar, cinnamon and lemon juice.
- Wipe skillet clean, add oil and heat over medium heat.
- Add apple mixture, spreading evenly over bottom of the pan and cook. Stir constantly, until browned but not mushy (approximately 4 minutes).
- Add cranberries and heat thoroughly.
- Stir in granola. Reduce heat to low.
- Flatten mixture with a wooden spoon, cover with lid and cook for 1 - 2 more minutes.
- Serve topped with frozen yogurt, if desired.
